Trick and treat at the same time!

Each year since we moved to this part of the world, I am really enjoying watching the children having some good giggles around the Halloween time.
I must admit I did not grow up with it but It seems like, it sparkles a sense of fun in the house and this is really fun! :)
Plus, every year, I collect a quick little portrait of the make up and costume, it will be fun looking back over those later.

I have been experimenting baking with alternative sweetener lately, my first attempt was with the granola.
So Halloween was the perfect excuse for another experiment right?!

I got a bit cheeky, I had to did I :)

I prepared some beetroot, raw cocoa cupcakes  (GF , very low cane sugar)

Now there is NO WAY my children would have happily eaten those cup cakes if they knew there was some beetroot inside :) hehe I would have got the big "Ewwww"!!

But non :) instead they liked them, so shhhhhhh I hope they never read this post!! :)

Do you like my cake toppers :)

Well the cakes were quite nice, but the marshmallow frosting a complete miss, so I won't share the recipe :)!!

Just in case you want to give it a go ?!

 I put together:

  • 2 small beetroot (pre coocked and cold)
  • 1/4 cup of rice oil
  • 1/4 cup of LSA
  • 1 cup of Self Raising GF flour (I used the Whitewings brand)
  • 4 tablespoon of raw cacao
  • 100 g melted 85% cocoa Chocolate (Lindt extra dark chocolate that contains some sugar, so you could substitute to sugar free chocolate)
  • 1/4 cup almond milk
  • 2 eggs
  • 1/2 cup of Xylitol (You may want to add more if you like extra sweetness...I imagine any alternative sweetener might work?)

Blend the oil and beetroot into a puree
mix with xylitol, eggs, cocoa, almond milk, melted chocolate.
Add dry ingredients mix well and pour into baking tray with little wrappers.

Bake for ~18 min at 180 degrees Celsius.
